Mezcal, tequila and raicilla are agave spirits. Sotol comes from Dasylirion. This botanical distinction is a starting point, not a flavour description. Compare raw material, region, producer, production and batch.

On a drinks list, diversity matters when every expression serves a purpose. A small selection that staff can explain may be more useful than a long list without context.

Agave and its connection to the table

Compare expressions, not stereotypes

The category gives context but does not replace the specification. Smoke does not explain every mezcal, nor barrels every tequila. The same category can contain expressions made through different production choices.

One comparison sheet for all four categories

Record raw material, production location, producer, process, strength, batch and bottle size. Then add your own aroma, texture and finish notes. Keep documented facts separate from sensory impressions.

Giving them a place at the table

Choose the purpose first: explaining a region, accompanying a dish or comparing techniques. You do not need all four categories for a coherent experience; you need to explain why you chose each expression.
