Mezcal Omakase. In the maestro’s hands.
Omakase (おまかせ) means “I leave it to you” in Japanese. In Japanese dining, it expresses the trust of a guest who lets the chef choose. At ACHKA, we draw on that idea by entrusting the maestro mezcalero with proposing a distinctive expression.

A personal process, step by step.
02 · The maestro proposes
We take your request to the maestro mezcalero. He evaluates the wild agaves he has available, their provenance and production feasibility, then prepares a proposal for your selection. The agave is chosen through that assessment, not assumed availability.
03 · Approve your proposal
Review the product, personalisation, quantities and quotation. Once the proposal and its terms are accepted, a non-refundable deposit starts the commission. The amount and cancellation terms are specified in writing, subject to applicable statutory rights.
04 · Time for craftsmanship
Production is estimated at 3 to 4 months after approval and the deposit, subject to the maestro’s confirmation. Batches are planned at around 200 bottles, numbered and personalised as agreed. A minimum request of 20 bottles does not require purchasing the full batch or imply exclusive rights to the entire batch.
05 · A delivery that tells its story
Once the bottles are delivered, the selection is introduced at a private tasting. Javier guides the tasting and learning experience; the maestro mezcalero explains the product in a video presentation. Location, participants and format are agreed in the proposal.
Your edition deserves a gathering.
Indicative prices start at approximately €1,000 per bottle. The quotation will detail taxes, shipping, personalisation and the scope of the tasting. Production time does not automatically include shipping or import formalities.
Exclusivity, agave, final batch size and delivery date are confirmed for each commission. Submitting a request does not place an order or require payment.
