THE BOOK OF HERITAGE · ACHKA
The art of transformation
Between plant and glass lie decisions. Understanding them lets us speak precisely about craft and choose an expression for more than its name.

Reading the process
Cooking, milling, fermentation and distillation provide a vocabulary for asking how an agave spirit was made. Equipment and practices vary; they should be documented by producer and batch. A bottle, a photograph or a smoky impression during tasting cannot establish the entire process.
Four categories, distinct identities
Tequila uses blue agave and distinguishes category from class. In mezcal, artisanal and ancestral categories refer to regulated processes: they are not an automatic quality scale. Raicilla retains its own territorial and production identity. Sotol calls for a different raw material, Dasylirion. Each category deserves its own reading, without improvised hierarchies.
From information to judgement
A professional selection combines specifications, traceability, sensory assessment and service context. Ask about producer, batch, strength and format; then consider the role on your list. The mezcal, tequila, raicilla and sotol guides expand these points and let you return to sources without reading the entire book.
