Understanding origin
Tequila uses blue Agave tequilana Weber and must meet its denomination-of-origin and production requirements. “Tequila” and “Tequila 100% Agave” are distinct categories. Blanco, joven, reposado, añejo and extra añejo are classes.
Looking beyond the category
Reposado requires at least two months of maturation; añejo one year; extra añejo three years, under the applicable conditions of the standard. Maturation time does not replace sensory assessment or determine the best use in service.
