Our working approach is to taste the expression with the dish, rather than assign universal pairings by category. Intensity, texture, acidity, sweetness and persistence offer useful prompts for kitchen and service teams.

A small bite and a short explanation can be enough to open a conversation. The aim is a coherent experience that respects the restaurant’s identity, without encouraging increased consumption.

Agave and its connection to the table

A simple trial with the kitchen

Taste the dish and spirit separately first. Then combine a bite with a small sample. Record what becomes stronger, what loses balance and what remains in the finish. Change one variable at a time: sauce, garnish or expression.

Agreement before universal rules

Ask kitchen and service teams, not only the host. Describe the result in language guests understand. If a pairing needs a long explanation to work, revisit the pairing.
